Ingredients
  

  • 2 cups cooked, shredded or diced chicken
  • 1 1/2 whole English cucumbers, halved and sliced
  • 1 1/2 cups corn, grilled or canned and drained
  • 1/4 whole red onion, finely diced
  • 1 whole jalapeno, seeded and diced
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup plain Greek yogurt
  • 1/3 cup mayonnaise
  • 1 whole lime, juice and zest
  • 1 clove garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • as needed crumbled cotija cheese, for topping

Method
 

  1. Dry sliced cucumber between paper towels.
  2. Whisk together Greek yogurt, mayonnaise, lime, garlic, and spices for the dressing.
  3. Combine chicken, cucumber, corn, onion, jalapeno, and cilantro in a large bowl.
  4. Toss with the dressing until evenly coated.
  5. Top with cotija cheese before serving.

Notes

  • Pat cucumber dry to prevent a watery salad.
  • Char corn in a dry skillet for smoky flavor.
  • Chill for at least 20 minutes before serving for best flavor.
  • Does not freeze well due to the cucumber and dressing texture.
