Ingredients
  

  • 6 cups fresh baby spinach
  • 1 whole apple, thinly sliced
  • 1/2 cup walnuts, toasted and roughly chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup thinly sliced red onion
  • 3 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1/2 tsp dijon mustard
  • to taste salt and black pepper

Method
 

  1. Whisk together olive oil, vinegar, honey, mustard, salt, and pepper.
  2. Combine spinach, apple, walnuts, feta, and red onion in a bowl.
  3. Drizzle dressing over the salad just before serving.
  4. Toss gently to coat evenly and serve right away.

  • Dress the salad right before serving to prevent wilting.
