Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1/2 cup mini chocolate chips
  • 1/4 cup ground flaxseed
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tbsp chia seeds optional

Method
 

  1. Stir peanut butter, honey, and vanilla together until smooth.
  2. Mix in oats, flaxseed, salt, and chia seeds, then fold in chocolate chips.
  3. Chill the mixture for 20 to 30 minutes until firm enough to handle.
  4. Roll into balls and place on a lined tray.
  5. Refrigerate another 15 minutes to set, then store in an airtight container.

Notes

  • Chill the mixture before rolling to avoid a sticky mess.
  • Wet hands slightly to make rolling easier.
  • Add extra oats if the mixture is too sticky.
  • Freezes well for up to 3 months.
