Mediterranean Steak Bowl Recipe

Ingredients
  

  • 1.5 lbs flank steak or sirloin
  • 3 tbsp olive oil, divided
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper
  • 2 cups cooked rice, white or brown
  • 1 cup cherry tomatoes, halved
  • 1 whole English cucumber, diced
  • 1/2 whole red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted
  • 1/2 cup crumbled feta cheese
  • 3/4 cup tzatziki sauce
  • 2 tbsp fresh parsley, chopped for serving

Method
 

  1. Marinate steak in olive oil, lemon juice, garlic, oregano, salt, and pepper for 15 to 20 minutes.
  2. Sear the dried steak in a hot oiled skillet for 3 to 4 minutes per side, then rest 5 minutes.
  3. Slice steak thinly against the grain.
  4. Divide rice among bowls and top with steak, tomatoes, cucumber, onion, and olives.
  5. Finish with feta, a dollop of tzatziki, and fresh parsley before serving.

Notes

  • Marinate no longer than 30 minutes to avoid a mushy texture from the lemon juice.
  • Always slice steak against the grain for tenderness.
  • Salt vegetables briefly and drain excess liquid before assembling.
