Low Carb Cheesy Garlic Chicken Wraps

Ingredients
  

  • 2 boneless skinless chicken breasts, sliced thin
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • salt and black pepper to taste
  • 4 low carb flour tortillas 8 inch size
  • 1.5 cups shredded mozzarella or Mexican blend cheese
  • 1 cup fresh spinach or baby arugula
  • 1/4 cup cream cheese, softened
  • 1 tsp garlic powder for the cream cheese spread
  • optional - sliced roasted red peppers or avocado

Equipment

Method
 

  1. Season chicken on both sides with Italian seasoning, smoked paprika, onion powder, salt, and pepper.
  2. Cook garlic in butter for 30 seconds, then add chicken and cook 3 to 4 minutes per side until golden and cooked through.
  3. Mix softened cream cheese with garlic powder and a pinch of salt until smooth.
  4. Spread garlic cream cheese on each tortilla, then add spinach, chicken strips, and shredded cheese.
  5. Fold the sides in and roll tightly from the bottom. Press the seam down to seal.
  6. Toast seam-side down in the skillet over medium heat for 1 to 2 minutes per side until golden and cheese is melted.
  7. Slice diagonally and serve immediately while warm.

Notes

  • Use tortillas with 5g net carbs or fewer for best low carb results.
  • Do not overfill - a tight roll holds together better during toasting.
  • Store chicken filling separately for up to 3 days and assemble fresh.
  • Reheat assembled wraps in a dry skillet, not the microwave.
