Homemade Oatmeal Cream Pies

Ingredients
  

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3 cups old fashioned oats
  • 1/2 cup unsalted butter, softened, for filling
  • 1 1/2 cups marshmallow fluff
  • 1 cup powdered sugar
  • 1 tsp vanilla extract, for filling

Method
 

  1. Cream butter and sugars, then add eggs and vanilla.
  2. Mix in dry ingredients, then fold in oats.
  3. Scoop dough into 24 balls and bake at 350°F for 10 to 12 minutes.
  4. Cool cookies completely on a wire rack.
  5. Beat butter, marshmallow fluff, powdered sugar, and vanilla until fluffy.
  6. Sandwich filling between two cookies.

Notes

  • Pull cookies from the oven while centers still look slightly soft.
  • Chill dough if it spreads too much while baking.
  • Freezes well for up to 2 months.
  • Let refrigerated pies sit at room temperature before eating.
