High Protein Ground Turkey Casserole

Ingredients
  

  • 1 1/2 lbs ground turkey, lean
  • 1 tbsp olive oil
  • 1/2 whole yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups cauliflower rice, fresh or frozen
  • 1 cup diced tomatoes, drained
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp fresh parsley, chopped for serving

Equipment

  • 9x13 inch baking dish

Method
 

  1. Cook onion and garlic, then brown ground turkey fully.
  2. Drain excess liquid, then stir in cauliflower rice, tomatoes, and seasonings.
  3. Transfer mixture to a baking dish and top with cheddar and mozzarella.
  4. Bake at 375°F for 18 to 20 minutes until melted and golden.
  5. Rest 5 minutes, then top with parsley before serving.

Notes

  • Drain tomatoes and squeeze cauliflower rice to prevent a watery casserole.
  • Let the casserole rest before slicing for cleaner scoops.
  • Freezes well for up to 2 months.
  • Reheat covered in the oven for the best texture.
