Guac Cart Guacamole

Fresh, creamy, and chunky guac cart guacamole made in 15 minutes with ripe avocados, lime, jalapeño, and cilantro.

Ingredients
  

  • 3 ripe Hass avocados
  • 2 tbsp fresh lime juice (about 1 large lime)
  • 1/2 tsp kosher salt, plus more to taste
  • 1/4 cup white onion, finely diced
  • 1 jalapeño, seeded and finely diced
  • 2 tbsp fresh cilantro, chopped
  • 1 small Roma tomato, seeded and diced
  • 1 small garlic clove, minced optional

Method
 

  1. Halve each avocado, remove the pit, and scoop flesh into a medium bowl.
  2. Add lime juice and salt immediately and mix briefly.
  3. Mash with a fork to a chunky texture, leaving some pieces intact.
  4. Fold in onion, jalapeño, cilantro, tomato, and garlic if using.
  5. Taste and adjust salt and lime juice as needed.
  6. Serve immediately or cover tightly with plastic wrap pressed to the surface and refrigerate up to 2 hours.

Notes

  • Use only fully ripe avocados for best flavor and texture.
  • Mash two-thirds smooth and leave one-third chunky for the best guac cart texture.
  • Press plastic wrap directly onto the surface to prevent browning.
  • Add a fresh squeeze of lime before serving if made ahead.
