Crispy Oven Baked Sweet Potato Fries

Ingredients
  

  • 2 large sweet potatoes, peeled
  • 2 tbsp cornstarch
  • 2 tbsp olive oil or avocado oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt plus more for finishing
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper, optional

Method
 

  1. Cut peeled sweet potatoes into 1/4-inch sticks and soak in cold water for 30 to 60 minutes.
  2. Drain and pat completely dry, then preheat oven to 425°F.
  3. Toss dried fries with cornstarch, then add oil and spices and toss again.
  4. Spread in a single layer across two parchment-lined baking sheets with space between each fry.
  5. Bake 15 minutes, flip, then bake 10 to 15 more minutes until golden. Season with flaky salt and serve immediately.

Notes

  • Soak fries in cold water for at least 30 minutes before baking.
  • Dry thoroughly before adding cornstarch and oil.
  • Never crowd the baking sheet, use two pans for two large potatoes.
  • Serve immediately for maximum crunch.
