Season chicken with paprika, garlic powder, onion powder, salt, and pepper.
Cook in olive oil over medium-high for 4 to 5 minutes per side. Rest 3 minutes then slice thin.
Toss avocado with lime juice and a pinch of salt.
Spread mayo on the inside of each bread slice. Butter the outside of each slice.
Layer chicken, avocado, cheese, and any extras. Close with remaining bread slices.
Toast butter-side down in skillet over medium heat, covered, for 2 to 3 minutes per side until golden and cheese is fully melted.
Slice diagonally and serve immediately.
