California Roll Sushi Bowls

Ingredients
  

  • 2 cups short-grain sushi rice, uncooked
  • 2.5 cups water
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt rice seasoning
  • 8 oz imitation crab meat, shredded or sliced
  • 1 large avocado, sliced or diced
  • 1 whole English cucumber, thinly sliced or matchstick cut
  • 2 sheets nori, cut into thin strips
  • 2 tsp sesame seeds, toasted
  • 2 tbsp soy sauce or tamari for serving
  • 1 tbsp pickled ginger for serving
  • 3 tbsp mayonnaise sriracha mayo
  • 1-2 tsp sriracha sriracha mayo

Method
 

  1. Rinse sushi rice under cold water until nearly clear, then cook with water according to package directions.
  2. Season hot cooked rice by folding in the rice vinegar, sugar, and salt mixture until glossy and just warm.
  3. Mix mayonnaise and sriracha together in a small bowl to make the spicy mayo sauce.
  4. Divide seasoned rice between bowls and top with crab, avocado, and cucumber arranged in sections.
  5. Finish with nori strips, toasted sesame seeds, a drizzle of sriracha mayo, and soy sauce and pickled ginger on the side.

Notes

  • Rinse sushi rice thoroughly before cooking for a cleaner, less gummy texture.
  • Season rice while still hot so the vinegar mixture absorbs evenly.
  • Add nori strips just before serving to keep them from softening.
  • Store components separately for best meal prep results up to 4 days.
