Air Fryer Apple Pie Taquitos

Ingredients
  

  • 2 medium apples, peeled and finely diced Granny Smith or Honeycrisp
  • 2 tbsp unsalted butter for filling
  • 2 tbsp brown sugar, packed
  • 1 tsp ground cinnamon for filling
  • 1/4 tsp ground nutmeg
  • 1 tsp cornstarch
  • 1 tbsp water
  • 1/2 tsp vanilla extract
  • 8 small flour tortillas, 6-inch
  • 2 tbsp unsalted butter, melted for coating
  • 3 tbsp granulated sugar for coating
  • 1 tsp ground cinnamon for coating

Method
 

  1. Cook diced apple with butter, brown sugar, cinnamon, and nutmeg over medium heat 3 to 4 minutes. Stir in cornstarch and water mixture, cook 1 minute until thickened. Add vanilla and cool 5 minutes.
  2. Warm tortillas until pliable. Mix cinnamon sugar coating in a shallow bowl.
  3. Fill each tortilla with 2 tbsp apple filling in a tight line. Roll firmly and place seam-side down.
  4. Brush each taquito with melted butter on all sides. Roll in cinnamon sugar to coat evenly.
  5. Preheat air fryer to 375°F. Air fry seam-side down in a single layer 6 to 8 minutes, flipping halfway, until deep golden. Serve immediately.

Notes

  • Cool the filling 5 minutes before rolling - hot filling softens the tortilla and prevents crisping.
  • Place taquitos seam-side down in the air fryer to keep them closed during cooking.
  • Coat every surface in butter before the cinnamon sugar for the best browning and crunch.
  • Freeze rolled and coated taquitos for up to 1 month and air fry directly from frozen at 375°F for 10 to 12 minutes.
  • Reheat leftovers in the air fryer at 350°F for 3 to 4 minutes to restore crunch.
